Vitamin Water Infusions

Creating your own vitamin water is one of the simplest things to do! All you need is some fruit, herbs and water and you are set. Don't settle for the "vitamin waters" you might notice in grocery stores. Those waters are full of artificial chemical flavourings, plenty of refined sugar and bone dissolving acids all of which promote illness and disease. 

Making your own vitamin water infusions is quick and easy! They are packed with natural vitamins and minerals (not synthetic alterations of them) and thus they are better recognized and utilized in the body. Make sure to create larger batches so that these waters will last you all throughout the week!


Directions:
1. Pick a non-citrus fruit - I like to pick things like berries, kiwi, mango or pineapple. 
2. Pick a citrus fruit - you can choose from orange slices to lemon or lime slices!
3. Add herbs - choose things like mint, rosemary, basil or other favourite herbs

Once you have decided on the combination you want to use (and you may add as little or as much as you please of each - I like to add in about 1/2 cup of each fruit and 1/4 cup of herbs for 2 litres of water), put them into a large jug of water and let them soak in the water in a fridge overnight. In the morning you will have yourself a wonderful vitamin infused water that you can enjoy over the day!

Favourite combinations of mine:
1. Strawberry, lemon, mint
2. Lemon, lime, mint
3. Kiwi, lemon, lime, mint
4. Pineapple, lemon, basil
5. Mango, orange, rosemary

*You may also choose to add some ice to your water for an even cooler treat!

12 Foods That You Must Buy Organic


Some foods are grown in a way that exposes them to more toxic chemicals than others and some foods are notorious for being exceptionally filthy when you get them at the grocery store.  Here is a list of produce you should make sure you buy organic to avoid the toxins.  They may look healthy, but unless they are organic, they are contaminated:

Kale:  Though a super food, kale is usually heavily contaminated with pesticides.

Lettuce:  More than 50 different pesticides have been found on lettuce.

Potatoes :  More than 35 pesticides have been detected in tests conducted by the USDA.

Grapes:  Imported grapes can have over 30 chemical pesticides and raisins have high pesticide residue tests as well.

Spinach:  Has tested positive for a whopping 50 different chemical pesticides.  Frozen spinach usually has about the same amount.

Strawberries:  A regular on the dirty dozen list, unfortunately these delicious berries have been shown to have over 60 different pesticides on them though frozen strawberries have less.

Apples:  Over 40 chemicals have been found on apples.  Apple sauce and apple juice also contained pesticide residue.

Peaches:  We all love peaches, but not the 60 plus pesticides found on them.  Canned peaches have much less but it is best to go organic. 

Celery:  Tests on this crunchy enjoyable veggie turned up over 60 chemicals. 

Nectarines:  Overall, 33 different pesticides have been found on these, though domestic grown nectarines tend to be less contaminated then imported fruits.

Bell peppers:  Nearly 50 chemicals on these and every color variety of sweet bell peppers are contaminated.

Blueberries:  Pushing over 50 varieties of chemical residues, these berries should be bought from the organic section.

Foods To Lower Blood Pressure

If you suffer from high blood pressure (hypertension), or consume a diet which places you at risk for developing high blood pressure, you are at risk for experiencing heart attacks and strokes as well as kidney failure. Most people have high blood pressure and don’t even know it until they get a heart attack or stroke!

Consuming highly processed foods like fast food with incredibly high sodium levels are extremely damaging and is often the main culprit in raising your blood pressure. Another factor that puts you at risk for high blood pressure is fat – that is, the highly saturated and trans fatty acids which clog your arteries and make it hard for blood to flow freely through your veins, causing build-up and thus, high blood pressure.

Foods that help reduce high blood pressure

(1) Garlic
You can change your cholesterol levels and naturally lower your blood pressure levels with garlic! In fact, most members of the allium family (onions, garlic, leeks, etc.) have been shown to reduce cholesterol, high blood pressure and the flu. Countries who consume large amounts of garlic have also been correlated with the lowest levels of cardiovascular disease.

(2) Kiwi
A recent study in 2011 found that just 3 kiwis a day may naturally lower blood pressure (opposed to eating just one apple a day). The study took place over 8 weeks, and at the end of the study, individuals who consumed the kiwis had significantly lower systolic blood pressure than those who ate only 1 apple a day. Kiwis are lutein-rich (an antioxidant), which helps beat free radicals which are often linked to high blood pressure. Kiwis are also one of the most antioxidant-rich fruits, as reported by the Journal of the American College of Nutrition (along with grapes, and wild blueberries).

(3) Grapes
A study at the University of Michigan showed that grapes may help fight high blood pressure and heart disease (especially if you consume a salty diet). Grapes are incredibly high in antioxidants which fight off free radicals that normally lead to heart failure and hypertension. Grapes also lower inflammation in the body and allow the blood vessels to breathe and relax to prevent higher blood pressure.

(4) Leafy Lettuces
Eating green leafy vegetables on a consistent basis can help lower your risk for developing high blood pressure. Leafy greens are incredibly vitamin and mineral rich (with things like calcium, potassium, and manganese) which protects against heart disease and stroke. Lettuces are also nitrate-rich which has been linked to a reduction in blood pressure.

(5) Bananas
Bananas are very high in potassium which helps regulate blood pressure. Foods with potassium nitrate (like bananas and dates) have been reported to be even better than supplements using potassium chloride for lowering blood pressure, according to a UK study. Eating just two bananas a day can lower blood pressure by up to 10%!

(6) Watermelon
Citrulline in watermelon helps to normalize blood pressure. Eating up to 1/2 of a large watermelon per day can help lower high blood pressure, especially when the fruit is ripe, and when this antioxidant is at it’s highest levels. Citrulline is a type of amino acid that is converted into another amino acid, called Arginine (which people normally take to help lower their blood pressure). However, eating the more natural form of this compound is best, so make sure you eat the whole watermelon in it’s true, natural form!

Signs & Symptoms of Gluten Intolerance


Could you be suffering from a gluten intolerance? Over 55 diseases have been linked to gluten (a protein found in wheat, rye, and barley, and in lower levels in spelt, kamut and oats), and around 99% of individuals suffering from gluten intolerances or celiac disease are never diagnosed. These individuals, unfortunately, fail to ascribe their ill health or symptoms to gluten sensitivity and instead try treating symptoms (with drugs) that otherwise never go away.

Gluten is a staple of the American diet. It is in pizza, pasta, bread, wraps, rolls, and pretty much all processed foods. It also causes serious health complications, with up to a 72% increased risk of death in those with gut inflammation related to gluten.

In fact, one study compared the blood of 10,000 people from 50 years ago to 10,000 people today and found that celiac disease rose by up to 400% during that time period. This is great news for the American healthcare system who claims millions of dollars off the drugs used to treat gluten-intolerance symptoms many individuals suffer from today.

The New England Journal of Medicine listed 55 “diseases” that can be caused by eating gluten. These include osteoporosis, irritable bowel disease, inflammatory bowel disease, anemia, cancer, fatigue, canker sores, and rheumatoid arthritis, lupus, multiple sclerosis, and almost all other autoimmune diseases. Gluten is also linked to psychiatric and neurological diseases, including anxiety, depression, schizophrenia, dementia, migraines, epilepsy, and neuropathy (nerve damage), as well as autism.

If you have any of the above diseases, or any of the symptoms listed below, you may have a gluten intolerance:

- Digestive Issues: gas, bloating, diarrhea, constipation
- Nutritional Deficiencies: due to malabsorption (e.g., suffering from anemia (iron malabsorption) or “chicken skin” on back of arms (result of fatty acid deficiency and vitamin A deficiency secondary to fat-malabsorption caused by gluten damaging the gut)
- Weight loss or weight gain: gluten protein disrupts metabolism functioning
- Fat in stools: gluten prevents fat absorption
- Aching joints: gluten triggers inflammation in the body, causing swelling and pain in your joints
- Depression: intestinal damage caused by wheat leads to malabsorption, and prevents our guts from absorbing zinc and B vitamins which are crucial for regulating our moods
- Eczema: related to the inflammation that gluten triggers in the body
- Headaches: inflammation from gluten puts a lot of pressure on our blood vessels, which can cause pounding headaches
- Exhaustion: gluten is incredibly hard to process by the body, and slows our digestion, thus making us tired
- Irritability & Behavioural changes: same as depression, our bodies cannot absorb minerals and vitamins when our gut is destroyed by the gluten we eat. These vitamins and minerals help regulate our mood
- Irregular menstruation, infertility, miscarriages: gluten intolerance creates imbalances to our hormones and can lead to a myriad of female fertility and menstruation issues
- Cramps, tingling, & numbness: triggered by inflammatory response the body has to gluten protein
- Slow infant and child growth: due to nutrient malabsorption
- Decline in dental health: gluten sticks to our teeth and this causes bacteria to thrive

Test yourself for gluten intolerance:
Eliminating gluten from your diet for a few weeks to a month is a great way to tell if your body has an issue with gluten. Gluten is a very large protein, so it is important to recognize that is may take months or years to clear from your system, so extending this gluten-free fast longer than a couple months before introducing it (if you so choose) is best.

If you feel much better off gluten than you do on gluten, then gluten is likely a problem for you. Eating a whole foods diet, high in raw fruit and vegetables will ensure the levels of gluten in your diet are significantly cut back.

Most people think not using salt will lead to bland tasting foods – this is usually because they leave out salt and don’t add in anything else to help maximize flavour. This is where herbs and spices come in! They help add incredible flavour to your foods and contain plenty of vitamins, minerals and antioxidants which help fight off disease. I particularly like to use dill because it is very salty and makes everything taste amazing. The variety of herbs and spices you can use are endless! From mint to basil, to chile flakes and garlic – you won’t even remember that you forgot to add salt.

Instead of butter or margarine eat avocado!
Using avocado in place of butter is a great food swap! Butter is laden with artery-clogging saturated fat and margarine is loaded with ingredients that are found in plastic products – so what better to use than omega rich avocado? Avocados have a naturally smooth, creamy texture, and can be used as a healthy substitute in baking for butter and eggs! You can also use it as a spread on toast in the morning, or just scrap the toast and eat the avocado itself! Grains are not necessarily a human food – in fact, before the Agricultural Revolution, a couple hundred thousand of years passed without consumption of grains. In fact, studies have found that the human brain’s physical ability and functioning was highest just prior to this wheat-based revolution. Not just that, but archeological evidence has shown that since humans became more involved in their agricultural practices, human strength has slowly, but surely declined. Grains contain a compound called Phytic Acid which blocks the ability of our bodies to absorb calcium, magnesium, iron, copper and zinc – when grains begin to sprout, vitamin and mineral content increases and phytic acid content decreases. It’s Not a Fairytale: Seattle to Build Nation’s First Food Forest

Forget meadows. The city’s new park will be filled with edible plants, and everything from pears to herbs will be free for the taking.

Seattle’s vision of an urban food oasis is going forward. A seven-acre plot of land in the city’s Beacon Hill neighborhood will be planted with hundreds of different kinds of edibles: walnut and chestnut trees; blueberry and raspberry bushes; fruit trees, including apples and pears; exotics like pineapple, yuzu citrus, guava, persimmons, honeyberries, and lingonberries; herbs; and more. All will be available for public plucking to anyone who wanders into the city’s first food forest.



“This is totally innovative, and has never been done before in a public park,” Margarett Harrison, lead landscape architect for the Beacon Food Forest project, tells TakePart. Harrison is working on construction and permit drawings now and expects to break ground this summer.
The concept of a food forest certainly pushes the envelope on urban agriculture and is grounded in the concept of permaculture, which means it will be perennial and self-sustaining, like a forest is in the wild. Not only is this forest Seattle’s first large-scale permaculture project, but it’s also believed to be the first of its kind in the nation.
“The concept means we consider the soils, companion plants, insects, bugs—everything will be mutually beneficial to each other,” says Harrison.

That the plan came together at all is remarkable on its own. What started as a group project for a permaculture design course ended up as a textbook example of community outreach gone right.
“Friends of the Food Forest undertook heroic outreach efforts to secure neighborhood support. The team mailed over 6,000 postcards in five different languages, tabled at events and fairs, and posted fliers,” writes Robert Mellinger for Crosscut.
Neighborhood input was so valued by the organizers, they even used translators to help Chinese residents have a voice in the planning.
So just who gets to harvest all that low-hanging fruit when the time comes?
“Anyone and everyone,” says Harrison. “There was major discussion about it. People worried, ‘What if someone comes and takes all the blueberries?’ That could very well happen, but maybe someone needed those blueberries. We look at it this way—if we have none at the end of blueberry season, then it means we’re successful.”

A Dear John Letter To Trader Joe's

Dear Trader Joe,
When I met you many years ago it was love at first site. I loved your fun attitude and your philosophy. I loved your cozy, small neighborhood market feel.
You became a regularly weekly date and I always looked forward to seeing you. What new foods would I find? What yummy food samples were being served? Would there be a wine tasting or free coffee?
I was so enamored of you I told all my friends how great you were, I even wrote about you on my blog for the whole world to see.
For years you made me feel that I could afford to buy the healthiest food without breaking my budget and for that I will always be grateful.  So this is really hard for me to say, but I'm going to have to break up with you.
I'm really sorry. It's not you, it's me. I've changed. I'm not the same sugar-loving, carbo-consuming, canola-oil guzzling gal I was when we first met.
I was so blinded by your Hawaiian shirts, your super-friendly crew mates, and your whimsical captain's bell that I was too busy having fun when I shopped. But eventually I started to notice things that I didn't like.
I didn't like the way you started sneaking sugar into everything. Maybe it was always there and I just didn’t want to see it. When you're in love you tend to overlook these things. Do you really need to put it in your Chili Pepper Sauce and your Garlic & Butter Mashed Potato mix? But the last straw for me was when I found it in your beef broth! Why, Joe, why, do you need to put sugar in this most savory of items?
I now feel like I can't trust you. I have to read every single label and frankly, this is no way to shop. A good relationship is based on trust, and you have destroyed my faith in you.
But there is even a bigger problem than hidden sugar. It's your love affair with polyunsaturated vegetable oils really takes the cake. This stuff is bad news yet you put it in everything.
I don't understand how you can take such pride in putting out award winning olive oil on one hand yet sell canola oil on the other. It makes you seem like a hypocrite.
I know it's not all your fault. You have to give your customers what they want because without your loyal fans there would be no "Trader" you'd just be "plain old Joe".
Maybe you're worried your customers aren't ready to give up flavor boost from sugar or willing to pay more for food once you transition from using cheap vegetable oils. But Joe, you could pave the way! After all you've made some pretty bold moves like refusing to carry products that contain MSG and everyone has stuck by you! You could do the same here!
Oh, we had some good times, Joe. I'll never forget your pumpkin ice cream, your honey-glazed cranberry pecans, or your Greek apricot-mango yogurt. I'm really going to miss your BBQ Sauce, Teriyaki sauce, and your lime-curry marinade. They made others believe I was a good cook. But the truth is I owe it all to you.
I hope we can always be friends but I just don't want to be exclusive any more. I need to find someone whose philosophy is more akin to mine.
If you decide to mend your ways – get rid of hidden sugar and canola oil – give me a call and maybe we can patch this up.

Kiwi is in the ‘low’ category for glycemic index, meaning it does not raise your blood sugar quickly. It has a glycemic load of 4 which means it is safe for diabetics.

10. Protects Against Macular Degeneration and Other Eye Problems

Macular degeneration is the leading cause of vision loss in older adults. A study on over 110,000 men and women showed that eating 3 or more serving of fruit per day decreased macular degeneration by 36%. This is thought to be associated with the kiwi’s high levels of lutein and zeaxanthin — both of which are natural chemicals found in the human eye. Although both fruits and vegetables were studied, this same effect was not shown for vegetables.

Can I eat the skin?
 You can, but wash carefully to remove unwanted pesticides! Rub it a bit to minimize the fuzz. The skin actually provides more fiber to your sweet snack. If you’re not fond of the fuzzy exterior, simply “sloop” it out by slicing the kiwi in half horizontally and spooning out each end to enjoy.
